Every year, we host a big dinner at the Roadhouse with a special guest. Past events have included James Beard Award winner Frank Stitt, from Highlands Grill in Birmingham, Alabama; a celebration of Southern Italian pork dishes from importer and cooking teacher Ronaldo Beramendi; and Mark Essig, who shared stories from his new book Lesser Beasts: A Snout-to-Tail History of the Humble Pig. Our most recent Bacon Ball featured Clark Rachal from Louisiana, who cooked up Cochon de Lait, a Cajun country pig roast tradition.
