Take your next gathering up a notch with an amazing salad! Cheese can make or break a great salad, and these go beyond "just" a plate of lettuce to meal-sized dishes featuring cheeses and other delights from the Cream Top Shop selection. Don't mistake us, there will be some awesome spring greens from local farms in the mix, but we'll also have other classic and unique combinations to enjoy. Join our cheese and gelato makers on an hour-long adventure to learn how we transform local milk into delicious cheese and gelato. On this tour, you will get to observe mozzarella stretching as well as taste freshly-made gelato. Taste some of our collection of cow’s milk and goat’s milk cheeses while hearing directly from the makers how the cheese is made. After the tour, make time for tasting in the Cream Top Shop or grab a couple of grilled sandwiches to enjoy for lunch.

If our Mambo Italiano class is the grand tour, this is more like a trip to Little Italy. All the fun and flavor in half the time. We’ll make sesame semolina from Sicily and focaccia from Genoa. You'll learn all the techniques of mixing, kneading, shaping, proofing and baking these yeasted breads at home. From the nutty flavor of Sesame Semolina to the olive-oil-infused decadence of focaccia with Parmigiano Reggiano®, soon you, too, will be saying Viva Italia!

Before people find out how good our cakes taste, they comment on how good they look. Decorating might be the most fun part of cake making and it’s your chance to really put your personal touch on what you’ve baked. Learn the basics for a decorated cake. We’ll split several cakes, fill, crumb coat, and ice them. We'll spend time practicing with different piping tips to make shells, rosettes, roses, vines, leaves, and letters on a cake.Practice makes perfect so you’ll get plenty of that.Finally, you'll have time to let your creativity flow as you put all that practice to work by decorating your cake.

Featuring Southern Foodways Alliance director John T. Edge
Nationally acclaimed author and contributor for the New York Times and director of the Southern Foodways Alliance, an organization dedicated to preserving and exploring the histories of the American South. His recent publication, The Potlikker Papers: A Food History of the Modern South, is a collection of Southern cultural culinary experiences. O, The Oprah Magazine said his writing is “a panoramic mural of the South’s culinary heritage, illuminating the region’s troubled place at the American table and the unsung role of cooks in the quest for social justice.”
