A great class for beginning bakers. Learn the keys to flaky and tender scones, such as how to properly cut the butter into the flour. You’ll make three varieties of Bakehouse buttery scones—sweet crystallized ginger, savory cheddar herb, and flavorful Mother scones, made with freshly milled organic einkorn, which is known as "the mother of all wheat." Scones are simple to make and really delicious fresh out of your oven at home, so these recipes will surely become some of your favorites to reach for!

The secret is out! Learn the recipe for Zingerman's signature sour cream coffee cake with ribbons of cinnamon brown sugar and toasted walnuts. It's never too soon to start honing your expert palate, so join us for this JUST FOR YOUNGER KIDS tasting event where we'll read a story and learn to taste like an expert! In this event, we'll be reading a couple of special stories about two upcoming spring holidays: ✡ Passover and 🐰Easter. And we'll try a few foods we make and sell at the Deli in celebration of these holidays. The best part is we'll be teaching your kids to taste the food like an expert - using the 5 steps to tasting great food.

Hop on the tahini train! We’ve been experimenting in the kitchen with the latest culinary craze, tahini (rich sesame paste). And we’re using a particularly great organic tahini we sourced from Turkey. In this class you’ll bake tahini butter cookies, tahini banana bread made with Michigan wheat flour and black sesame seeds, and tahini and almond filled croissants with a carob drizzle. (Due to time constraints, we will provide you with already baked croissants to fill.) They'll add excitement and flavor to your baker's recipe box.

In this class, you’ll create a world-class tiramisu from scratch! We’ll make every component and assemble them together to make something special. You'll make chiffon cake, espresso syrup,and zabaglione, a cooked custard made with a bit of marsala wine. And that's not all. There's also the addition of mascarpone cheese, whipped cream and a generous dusting of cocoa. You'll get hands-on practice for a few key baking techniques, like whipping egg whites, cooking custard, whipping cream, folding mixtures, and piping cake batter. Wait until you taste how magically each flavor blends together to make one of our favorite Italian sweets.

One of our most popular classes because we teach you Zingerman's beloved croissant recipe. There are very few places in the world outside of France where you can get a good, truly flaky, buttery croissant. Zingerman’s Bakehouse is one of them. There are some tricks, but it’s mostly about taking the time to do it right. And when you smell and taste these treats, you’ll be happy that you did. In this class you’ll learn the basic techniques of creating traditional butter laminated dough. You'll make our plain butter croissant recipe in class, as well as almond and chocolate filled!

You'll leave BAKE! with our croissant recipe, the knowledge to recreate it at home, a dozen croissants you made in class, croissant dough to bake later and great coupons.

**You may want to bring a cooler to put your take-home croissant dough inif you are traveling more than an hour to attend class.

You can make your own fresh pasta at home! We’ll teach you two classic doughs, two sauces, and some traditional shaping techniques. Learn these versatile recipes for Southern Italian semolina pasta and Northern Italian egg pasta, as well as classic marinara sauce. We'll also demonstrate making a fresh pesto sauce with fresh basil and Parmigiano Reggiano®. You’ll get hands-on practice with various pasta rolling and shaping techniques. These can be the inspiration for all the pasta creations you can dream up at home.
